Made this more or less as per the recipe (using St Helen’s goats’ cheese but couldn’t get goats’ cream so used double cream from cows), served with rocket, watercress and spinach leaf salad and balsamic dressing: thoroughly delicious!

Did it again with an extra layer of sliced mushrooms and onions gently fried in St Helen’s goats’ butter and it, too, was excellent.

This recipe is crammed full of flavour. The goats’ cheese adds a subtle dimension that, unlike many other cheeses, doesn’t overpower the other ingredients.

I made this with mature cheddar and half fat creme fraiche as couldn’t get the goat’s cheese/ cream. Absolutely divine! Delicious the next day, too, reheated in the microwave for lunch. Thanks, Becca!

Oh my goodness, this sounds fantastic! A perfect recipe for any goats cheese lover and wanting something quick and delicious. A great way to use lentils, too!
